A few practical notes. Keep the cheese in the coldest part of your fridge, in its wrapping or in something airtight once you have opened it. Take it out twenty minutes or so before you eat it, because cold flattens flavour. And do not feel you need an occasion for it. A wedge in the fridge on a Tuesday is a good thing to have.
