Cumin Gouda Stuffed Chicken

Ingredients:

  • 2 chicken breasts

  • ½ cup grated Cumin Gouda

  • A handful of spinach, chopped

  • 1 tsp olive oil

  • Salt & pepper to taste

Method:

  1. Preheat oven to 190 °C.

  2. Cut a pocket into each chicken breast.

  3. Mix Cumin Gouda + spinach and stuff inside.

  4. Sear each side till golden; bake 20 mins.

  5. Let it rest before cutting into that melty goodness.

Serve with: roasted kumara and a Pinot Noir — because you deserve a little luxury on a Wednesday.
