Walnut Gouda Stuffed Chicken Breasts

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 cup shredded Walnut Gouda

  • 1 cup fresh spinach, chopped

  • 2 tablespoons olive oil

  • Salt, pepper, and your favorite herbs (like thyme or rosemary)

Instructions:

  1. Prepare the Chicken: Preheat your oven to 375°F (190°C). Carefully cut a pocket into the side of each chicken breast.

  2. Make the Filling: In a bowl, mix together the shredded Walnut Gouda and chopped spinach. Season lightly with salt and pepper.

  3. Stuff the Chicken: Fill each chicken breast pocket with the cheese and spinach mixture. Secure with toothpicks if needed.

  4. Sear and Bake: Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts on each side until golden brown, about 3-4 minutes per side.

  5. Bake: Transfer the skillet to the preheated oven and bake for about 20 minutes, or until the chicken is cooked through and the cheese is melted.

  6. Serve: Let the chicken rest for a few minutes before serving. Remove toothpicks, slice, and enjoy the gooey, flavorful filling.
