A counter is a good way to shop. You can see the cut face and the rind, and you can see the colour of the paste before you commit to anything. Ask when it was cut. The person on the other side of the counter is usually glad to talk about what they have been eating with it.

Buying it this way also fits how most of us actually shop. You are already out, you already have bread in the bag, and it goes in the basket with the rest of the week. It does not need to be a plan. A wedge of Manchego on a Tuesday, with whatever else is in the fridge, is a completely reasonable thing to do.
