Danish Havarti Toast with Honey & Thyme

A simple, café-style toast that tastes far more luxurious than it looks. Creamy Danish Havarti melts over warm bread, then gets a drizzle of honey and a sprinkle of fresh thyme for a sweet-savoury finish that’s perfect for breakfast, brunch, or a slow afternoon snack.

Ingredients

  • 4 slices rustic sourdough or country loaf
  • 60 g Danish Havarti, sliced or shaved
  • 2 tsp olive oil or soft butter (for brushing)
  • 2 tsp runny honey
  • 2 tsp fresh thyme leaves (plus extra to garnish)
  • 1 pinch flaky sea salt
  • 1 pinch freshly cracked black pepper (optional)

Optional add-ons

  • 0.5 small lemon, zested (for a bright finish)
  • 10 g chopped walnuts or pecans for extra crunch

Preparation

  1. Lightly brush one side of each bread slice with olive oil or soft butter. This will help your toast crisp up and turn golden in the pan, oven, or air fryer.
  2. Warm a non-stick pan, sandwich press, or preheat your oven/air fryer to around 200°C. Toast the bread (oiled side facing out if using a press) until lightly golden.
  3. Add sliced Danish Havarti on top of the warm toast and return briefly to the heat (or under the grill) just until the cheese starts to soften and gently melt.
  4. Transfer the cheesy toast to a plate. Drizzle with honey, then sprinkle over fresh thyme leaves.
  5. Finish with a pinch of flaky sea salt, a little cracked black pepper and, if using, lemon zest and nuts.
  6. Serve immediately while the cheese is soft, the toast is warm and the honey is still glistening.

  • Wrap remaining Danish Havarti in baking paper, then place in an airtight container.
  • Store in the fridge between +2°C and +6°C and aim to use within 5–7 days once opened.
  • Slice it into sandwiches, melt over roast vegetables, or tuck into omelettes and frittatas.
  • Cube small pieces for grazing boards or snack boxes so nothing goes to waste.
  • Grate and freeze in small portions to use later on toasties, baked potatoes or gratins.
