Red Pesto Gouda Sandwich

A vibrant, flavour-packed sandwich starring our Red Pesto Gouda — creamy Dutch cow’s cheese blended with herbs and tomato for a tangy, savoury kick. Perfect for a quick lunch, light dinner, or a healthy toasted snack.

Ingredients

  • 4 slices wholegrain or sourdough bread
  • 60 g Red Pesto Gouda, thinly sliced
  • 1 small tomato, sliced
  • 20 g baby spinach or rocket
  • 2 tsp olive oil or soft butter (for toasting)
  • 2 tsp basil or sundried-tomato pesto
  • 1 pinch sea salt (optional)
  • 1 pinch cracked black pepper

Optional healthy add-ins

  • 30 g grated carrot or beetroot
  • 10 g pumpkin or sunflower seeds

Preparation

  1. Lightly brush one side of each bread slice with olive oil or butter. This will help the sandwich toast evenly and turn golden.
  2. Spread pesto on the un-oiled side of the bread slices. Layer with Red Pesto Gouda, tomato slices, baby spinach or rocket, and any optional grated veggies or seeds.
  3. Close the sandwiches with the remaining bread slices, oiled side facing outwards. Press gently so the filling stays in place.
  4. Toast in a sandwich press, pan, or air fryer at around 200°C until the cheese is melted and the bread is crisp and golden (about 4–6 minutes).
  5. Slice in half and serve immediately with a side salad or fresh vegetable sticks for added fibre and colour.

If you have Gouda left over…

  • Wrap remaining Red Pesto Gouda tightly in baking paper, then place in an airtight container.
  • Store in the fridge between +4°C and +7°C. Use within 5–7 days once opened for best flavour.
  • Grate leftovers over roast vegetables, baked eggs, or pasta for an easy flavour boost.
  • Cube and add to salads, snack boxes, or grazing boards to avoid waste.
  • Freeze grated Gouda in small zip-lock bags for quick use in future toasties or bakes.
