Black Lemon Gouda Risotto with Charred Lemon & Herbs

Ingredients
1 cup Arborio rice
1 tbsp butter + 1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
½ cup dry white wine
4 cups vegetable broth, warmed
1 cup grated Black Lemon Gouda
Zest of 1 lemon
Salt and pepper to taste
Fresh herbs (basil, thyme, or parsley)
Charred lemon slices (for garnish)
How to Make
In a pan, melt butter and olive oil together. Add onion and garlic; sauté until fragrant.
Stir in the Arborio rice, coating it well in the butter mixture for a minute.
Pour in the wine and stir until it’s mostly absorbed.
Gradually add warm broth, one ladle at a time, stirring gently and waiting until each is absorbed.
When the rice turns creamy and soft (about 18–20 minutes), stir in Black Lemon Gouda and lemon zest.
Season to taste, top with charred lemon slices and a sprinkle of herbs.
